- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup whole milk
- ⅓ cup melted butter
- 2 large eggs
- 2 tablespoons honey
- 1½ cups fresh Alabama pecans, roughly chopped
- ¼ cup mini chocolate chips (optional)
- 2 tablespoons brown sugar
- ¼ cup finely chopped pecans
- 1 tablespoon melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan. Line the bottom with parchment paper.
- Toast 1½ cups chopped pecans on a baking sheet in oven for 8-10 minutes, stirring once.
- In a large bowl, whisk flour, sugar, baking powder, and salt. Make a well in the center.
- In a separate bowl, whisk milk, melted butter, eggs, vanilla, and honey until smooth.
- Pour wet ingredients into dry ingredients. Fold until just combined – batter should be lumpy.
- Fold in toasted pecans and chocolate chips if using. Reserve 2 tablespoons pecans for topping.
- Pour batter into loaf pan. Combine brown sugar, reserved pecans, and melted butter for topping. Sprinkle on top.
- Bake 55-60 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
