This cajun chicken tortellini recipe delivers bold spices, tender chicken, and creamy cheese tortellini in a one-pot, 30-minute dinner the whole family will love.

- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon cayenne pepper
- ½ teaspoon black pepper
- 1 teaspoon salt
- 1.5 pounds boneless, skinless chicken breasts, cut into pieces
- 1 pound fresh cheese tortellini
- 2 tablespoons olive oil
- 1 bell pepper, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 green onions, sliced
- 2 tablespoons fresh parsley, chopped
Instructions
- Mix cajun spices in a bowl. Season chicken with half the mixture.
- Heat oil in a large pot. Sear chicken 6-7 minutes until browned. Set aside.
- In same pot, sauté onion and bell pepper 4-5 minutes. Add garlic and remaining spices, cook 30 seconds.
- Add tomatoes, scrape bottom of pot. Stir in chicken broth. Bring to boil, add tortellini. Cook 8-10 minutes.
- Stir in cream, return chicken to pot. Simmer 3-4 minutes until heated through.
- Remove from heat. Stir in Parmesan. Garnish with parsley and green onions. Serve immediately.
Notes
Avoid overcooking chicken and add cream after lowering heat to prevent curdling. Garnish just before serving for freshness.
