- 2 pounds ground beef (80/20 lean-to-fat ratio)
- 1/2 cup breadcrumbs (panko or regular)
- 1 large egg, lightly beaten
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dijon mustard
- 1 teaspoon dried herbs (thyme, oregano, or Italian seasoning)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups beef broth (low-sodium preferred)
- 1 can (10.5 oz) cream of mushroom soup
- 1 packet (1 oz) onion soup mix
- 8 oz fresh mushrooms, sliced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch mixed with 2 tablespoons water (optional)
Instructions
- Mix ground beef, breadcrumbs, egg, onion, garlic, Worcestershire, mustard, herbs, salt, and pepper. Do not overmix.
- Shape into 6–8 oval patties. Press thumb in center of each.
- Optional: Brown patties in skillet, 2–3 min per side.
- Place sliced mushrooms in bottom of slow cooker.
- Layer patties over mushrooms in a single layer.
- Mix broth, soup, soup mix, tomato paste, and Worcestershire. Pour over patties.
- Cook on LOW 7–8 hrs or HIGH 4–5 hrs until patties reach 160°F.
- Optional: 30 min before end, stir in cornstarch slurry for thicker gravy.
Notes
Avoid overmixing the meat to keep patties tender. Use a 6-quart slow cooker for best results. For make-ahead, refrigerate formed patties up to 24 hours.
