Ingredients

  • 2 lbs kielbasa sausage, sliced into 2-inch pieces
  • 2 lbs sauerkraut, drained but not rinsed (reserve 1/4 cup juice)
  • 2 medium apples, cored and diced
  • 1 large yellow onion, thinly sliced
  • 2 tbsp brown sugar (optional)
  • 1 tbsp caraway seeds
  • 1 tsp black pepper
  • 1 bay leaf
  • 1 cup chicken broth or beer
  • 2 tbsp apple cider vinegar

Instructions

  1. Slice kielbasa and drain sauerkraut (reserve 1/4 cup juice). Dice apples and slice onion.
  2. Layer sliced onions at the bottom of the slow cooker. Add butter if using a newer hot-running cooker.
  3. Mix sauerkraut, apples, caraway seeds, brown sugar, and pepper. Layer half the mixture over onions, followed by half the kielbasa. Repeat layers.
  4. Pour broth or beer around the edges, add bay leaf and drizzle vinegar on top.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 4–6 hours until flavors meld.
  6. Remove bay leaf and stir gently before serving. Serve hot.

Notes

Use turkey kielbasa or rinse sauerkraut to reduce sodium. Add potatoes or carrots for variation. Keeps well refrigerated up to 4 days or freeze up to 3 months.
