Ingredients

  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 8 oz cream cheese, softened
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup frozen spinach, thawed and drained
  • ¾ cup chopped artichoke hearts (optional)
  • 3 cloves garlic, minced
  • ¼ cup chopped green onions
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ½ tsp salt
  • Optional: diced jalapeños, red pepper flakes

Instructions

  1. Mix softened cream cheese, mayonnaise, and sour cream until smooth. Add spinach, garlic, green onions, and seasonings. Mix well.
  2. Combine cheddar, Parmesan, and mozzarella cheeses in a separate bowl.
  3. Preheat oven to 375°F and line two baking sheets with parchment or silicone mats.
  4. Drop tablespoons of cheese mixture on sheets, flatten slightly. Add small spoonful of spinach mixture on top.
  5. Bake 8-10 minutes until edges are golden. Cool on baking sheet 3-4 minutes before transferring to rack.
