Description

A refreshing salad combining succulent shrimp, creamy avocado, and zesty lime in a vibrant, nutritious dish that’s ready in just 20 minutes.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe avocados, diced into ½-inch cubes
  • ¼ cup red onion, finely diced
  • 2 Roma tomatoes, diced
  • 1 jalapeño, seeds removed and finely diced (optional)
  • ¼ cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 clove garlic, minced
  • ½ teaspoon ground cumin
  • 1 teaspoon honey or agave nectar

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add shrimp and cook for about 2 minutes per side until pink and opaque. Season with salt and pepper. Transfer to a plate to cool.
  2. In a small bowl, whisk lime juice, remaining olive oil, minced garlic, cumin, honey, salt, and pepper to make the dressing.
  3. Dice avocados and combine with red onion, tomatoes, jalapeño (if using), and cilantro in a large bowl.
  4. Cut cooled shrimp into bite-sized pieces and add to the bowl. Pour dressing over and gently toss to combine. Let sit for 5 minutes.
  5. Serve immediately or chill for up to 30 minutes before serving.

Notes

Best enjoyed fresh. Use ripe avocados and avoid overcooking shrimp for optimal texture.
